TASTING NOTES - COLOUR AND CONDITION: Deep brick red, in bright condition. NOSE: A classic Cabernet combination of blueberries, violets, blackberries with tar and cedar notes. The musky, black fruit note also suggests the higher percentage of Petit Verdot this year. There’s also pencil shavings and pomegranate and a very light toasty oak. PALATE: In the traditional Moss Wood style, the first impression here is one of bright, generous blue and black fruit flavours, sitting over concentrated but balanced tannin. It’s the classic vineyard statement. However, there is also some pointers to the 2017 season, with crisp acidity, giving the palate a taut, almost zippy feel. The finish is firm, with a very light touch of toasty oak, mixing with cedar and tar. CELLARING: Apparently, Mark Twain once said history never repeats itself but it often rhymes and we reckon grape growing seasons are a classic example. Moss Wood followers will know we’re fond of reminiscing about vintages past and how they compare with current releases and yes, it’s a useful way to give perspective on wine style and cellaring potential. With the 2017 we turn immediately to the 1990 because these two share some remarkable similarities. Both were mild growing seasons with plenty of rain and in March, not only were the dates similar but also the amounts. It resulted in similar ripeness, 13.0 Baume in 2017 compared with 12.8 in 1990, and harvest with the former picked on 10th April and the latter on the 12th. Most importantly, this means we have great expectations of the 2017 because its older sibling remains one of Moss Wood’s finest that continues to drink well 30 years later. At present, the wine is showing vibrant fruit aromas so it’s an appealing youngster and can certainly be enjoyed now. However, the underlying structure is firm and will support long term aging, just as it did for the 1990. This elevated and south facing vineyard in the Seaview sub-region of McLaren Vale has a reputation for producing very stylish and elegant Cabernet Sauvignon wines. The section of the vineyard chosen for this wine was hand manicured from pruning through shoot and fruit thinning to produce a very small but very special parcel of grapes. After hand harvesting, crushing and fermentation the wine was matured in seasoned and new French oak barriques and hogsheads for 16 months. Further barrel selection has resulted in the finest expression of McLaren Vale Cabernet Sauvignon. Very deep ruby with intense aromas of spicy black currants, attractive mouth coating tannins, mid palate fruit intensity and impressive oak notes all describe the great structure that this wine has now and will carry into the future as it ages very, very slowly, which is typical of great Cabernet Sauvignon. This outstanding wine is lovely to drink now but will cellar for 10-20+ years to come.

“The Limb family have been a part of the viticultural and winemaking landscape of South Australia since the early 1920’s. The vineyard lies along the Western Ridge of the Barossa Valley, near the hamlet of Seppeltsfield. Facing west, it catches the afternoon sun, whilst the shallow and infertile soils only allow the vines to eke out a meagre existence - yielding a very small crop of intensely flavoured fruit. This small section of the Barossa is renowned for wines of great power and elegance, and this release is no exception to that. Traditionally open fermented with 10 days of skin contact, then basket pressed to barrel - this single barrel of wine was matured in a new French oak hogshead for almost 2 years. Bright, deep, brooding and intense - this wine has all the hallmarks of this noble variety and expresses it’s soil and geography with incredible length of flavour. Can be enjoyed roundly now, or cellared comfortably for the next 10 – 15 years.”

In this very Special Bordeaux blend we use Cabernet Sauvignon, Merlot, Malbec, Petit Verdot, Cabernet Franc. The various parcels of fruit that made up the 2015 Matrix were all picked, destemmed and lightly crushed separately and based on their own individual ripeness. Fermentation begins and is held at a maximum of 25°C for 10 days of rigorous pump-overs three times a day. The wine was then gently separated from the skin and transferred to French Oak barriques, 50% of which were new, to complete fermentation. The wine is then aged in French Oak for up to 24 months before being blended, lightly fined and filtered.
