After a gentle crush of the grape, the juices together with the skins go into open ferment. During this time (once fermentation starts) a daily control of Baume and temperature is carried out together with hand plunging of the cap to extract colour and tannins from the skins. After its fermentation to zero Baume, the wine is put into oak barrels 50% French oak and 50% American oak most of them 3 to 4 year old and with only 20% being new oak. The reason being is to produce fruit driven wine and not heavy oak flavour. Hence God’s Hill Wines are a Fruit driven wine. It is 100% Shiraz, Cabernet Sauvignon & Merlot Varietal (in purezza ) with no added flavours or any other additives. It is pure grape juice fermented to alcohol with the most stringent hygiene and love. Our first release is after 4 years to allow some bottle age thus making it pleasant to drink on release, and with careful cellaring many more years after that. Dark crimson in colour with deep garnet hues. A concentrated array of aromas of mulberry, blackberry and dark plum indicate the richness to come while savoury and complex notes of charcuterie, cedar, sage and five spice tease the senses. Plush and velvety on the palate, the wine has intense fruit concentration with plum, redcurrant, blackberry and anise flavours, yet an enchantingly elegant and refined structure. Layers of silky tannins reveal the impressive depth of the wine before giving way to an incredibly long finish. Maturation - Matured in 86% French and 14% American (33% new, 67% seasoned) hogsheads for 18 months prior to blending and bottling. Cellaring potential - Exceptional vintage, 30+ years (from vintage). * Over 175 years ago Johann Christian Henschke came from Silesia to settle and farm in the Eden Valley region of the Barossa. By the time third-generation Paul Alfred Henschke took over the reins in 1914, the famous Hill of Grace vines were more than 50 years old. They were planted around the 1860s by an ancestor, Nicolaus Stanitzki, in rich alluvial soil in a shallow fertile valley just north-west of the winery. The red-brown earth grading to deep silty loam has excellent moisture-holding capacity for these dry-grown vines, which sit at an altitude of 400m, with an average rainfall of 520mm. Hill of Grace is a unique, delineated, historic single vineyard that lies opposite a beautiful old Lutheran church which is named after a picturesque region in Silesia called Gnadenberg, meaning Hill of Grace. Cyril Henschke made the first single-vineyard shiraz wine from this vineyard in 1958 from handpicked grapes vinified in traditional open-top fermenters.

The luscious aged complexity from the older vintages is lifted by the intense primary fruit from the younger ones. The individual parcels knit together, removing vintage variation, to create a true shiraz varietal expression. This first cuvee of Amplify Shiraz in 2019 is stunning to drink now, but will continue to age beautifully for many years. Their toil, perseverance and conservatism in hardship has meant the many generations that followed have rejoiced in the riches of those efforts. The wine was produced from a small selection of low-yielding, dry-grown shiraz vines from the Hill of Grace vineyard, named the Post Office block, that were 26 years old at the time of picking and therefore considered too young for inclusion into Hill of Grace Shiraz. The quality of the grapes however, continue to warrant a separate bottling and limited release. The Post Office ruins are on the land that was previously Rosenzweig property, the Rosenzweig name translating from German to ‘rose twig’. *

The Shiraz grapes for this wine are sourced from Block 3 (clone BV30) and Block 4 (clone 1654) within the Schubert Estate vineyard Colour: Garnet, with deep dark core with ruby rim. Aroma: Complex amalgam of blue berry compote, black currant, and blue scented violet florals. With further glass swirling delicate wafts of cocoa, cured bacon and charcuterie come to the fore, complimented with subtle French oak five spice tones complete the stimulation of the senses. Palate: Upon the first taste the mouth surfaces are swamped with ripe plum, wild raspberry and blueberry flavours, framed with silky tannins that extend the sensuous experience for considerable time. The new oak is present, however interwoven with the lush primary fruit. The wine is amazingly balanced with only fruit flavour being in excess. Only the 4th vintage of this limited release wine. Although already a 5-year-old, and drinking beautifully at the moment, The Gander Reserve will continue to evolve rewarding the owner with exceptional. drinking over the next 20-25 years.

Maurice O'Shea was a pioneer of Australian wine, creating long-lived, highly celebrated wines from the 1920's through to the 1950's that were admired the world over. PRODUCT: Hexen Shiraz VINTAGE: 2015 APPELATION: Barossa Valley HARVEST DATE: 20th of February 2015 BOTTLING DATE: 19th of March 2018 ALCOHOL: 15.5% TA: 6.8 PH: 3.54 VITICULTURE: From a special selected low yielding single vineyard, these own rooted Shiraz vines are grown in rich red clay, pink marble and ironstone on a limestone base. Pruning techniques and trellis systems have been modified to spread the fruit zone evenly, providing a greater balance to each vine. VINIFICATION: Crushed and de-stemmed into open fermenters, with fermentation controlled at 25°C. This developing wine is pumped over each day. Free run is removed from skins and the must is gently pressed via an airbag batch press. Only light pressings were used for this wine. MATURATION: Partial barrel fermented in new French oak and maturated for a further 31 months in new American oak. COMMENTS: Overall, the 2015 Barossa Vintage was outstanding. Favourable climatic conditions and a pre-harvest rainfall event provided optimal vine health carrying the vines through warm to hot days prior to and early harvest. Fruit for this wine is sourced from a single vineyard situated on the north eastern hill slopes of the Barossa Valley. This Shiraz displays deep colour, rich varietal fruits, mocha chocolate, mint and cedar oak, balanced with fine tannins. Drink now or benefit by careful cellaring well into the next decade and beyond. CELLARING : If cellared correctly, this wine has the potential to age gracefully and has a life expectancy that extends well into the next decade and beyond.

Specially selected from a small patch of the Ace of Trumps Vineyard in McLaren Vale. This portion of the vineyard was hand manicured from pruning through shoot and fruit thinning to produce a very special parcel of grapes. After hand harvesting, crushing and fermentation the wine was matured in seasoned and new French oak barriques for 16 months. Further barrel selection has resulted in the finest expression of McLaren Vale Shiraz from this vineyard in the Seaview sub-region, an area renowned for producing intense and sophisticated red wines that age exceptionally well. The Shiraz for this wine is sourced from Block 2 affectionally known as “Goose Yard Block” within the Schubert Estate vineyard. Colour: Dark core with garnet rim. Aroma: Intense bouquet of dark chocolate, dark plums, liqueur cherry and dried cranberry notes. Secondary aromas of star anise, cinnamon, medjool dates and spicy cedar oak abound. Palate: Rich fruit forward flavours of blackberry, black currant and black olive are interwoven with savoury notes of leather, allspice, and cigar box. Before the first foundation stone was laid, a pact was made between owner and winemaker To make the best wine possible. The pact signifies everything that is great about passion, determination and friendship. Only 1008 bottles produced A small parcel from our oldest Swan Valley Shiraz vineyard is carefully harvested. A hands on and small batch approach is used to create our best red wine. After gentle pressing it is then matured in 100% new French oak for 14 months. No fining or filtration takes place prior to hand bottling. The nose is brooding with aromas of mulberry, raspberry and plum with undertones of sweet spiced vanilla and dark chocolate. The dense palate consists of berry fruits with vanilla and cedar spices, soft velvety tannins lead to a balanced and lingering plush finish that keeps on giving.
