Hand-picked Pinot Noir clones 114, 115, & 777 were harvested separately. The fruit was gently whole-bunch pressed into a tank and settled on the skin for a short period. The clear juice was then transferred to another tank and a neutral yeast was added for fermentation. A short maceration to achieve the delicate salmon colour.

Strawberries and cream on the nose with a light-body and a dry finish.
