Viticulture:

The vines are cane pruned, vertical shooting positioning trellis and crop thinned.

This Shiraz is the Jack Mann clone running east/west on a long sloping hill. The site is unique with the dark loam over limestone which produces a balanced canopy which needs little thinning.

All vines are hand tended during the growing season with shoot and bunch thinning.

Wine Making:

Hand-picked, destemmed and crushed with berries just split for gradual extraction of tannin and flavour. Pumped over 3 times daily and kept on skins for 21 days before pressing.

Pressed into 33% new oak with 90% French Oak and 10% American oak. Malolactic fermentation in barrel.

Aged for 24 months in oak before bottling.

Tasting Notes:

The colour is a bright garnet red with a nose of plum jam, allspice, sugar coated almonds, dark chocolate, curry leaf and toasty spicy vanilla oak. The dark red fruits drive the wine with red currents, cherries and raspberries. It wouldn’t be Shiraz without the spice characters and tiny hints of curry leaf, star anise and aniseed. The chalky tannins give you something to chomp on. Drink now or over the next 10 yrs.
